Sautéed Spring Onions & Oyster Mushrooms
Spring onions are in season. They are so sweet and tender, also they go excellent with oyster mushrooms! This quick sautéed dish pairs great with meat dishes, with pasta or over rice. Spring onions can be substituted with scallions, leeks, or sweet onions.
Ingredients:
3 oz fresh oyster mushrooms, cut into bite size
1 spring onion, sliced into 1/4 inches
1 medium garlic clove, chopped
2 tbsp butter
1 tbsp vinegar
3 tbsp water or broth
salt and pepper to taste
1. Heat butter in a large saucepan over medium heat.
2. Sauté mushrooms, spring onions, and garlic in the hot butter until they are lightly browned, about 2-3 minutes.
3. Add vinegar, water or broth, salt and pepper, and cook until the onions are tender, another 2-3 minutes.
4. Serve hot, and enjoy!
